This sparkling dry white wine is a blend of Seyval Blanc and Phoenix grape varieties.
It has a palate of apple, pear and bright citrus flavours with a long finish and has been crafted using only the Methode Traditionelle to produce a fine mousse.
The wine has had extended cellar ageing of no less than eighteen months on lees. The yeast kept in the bottle from secondary fermentation to add the fizz.
A dosage, a small amount of sugar and La Mare distilled grape brandy is added before corking and wiring.
