Apple Alchemy: From Orchard to Bottle, Crafted Sustainably

At Maison de Jersey, we’re proud to feature the brand new Apple Alchemy Collection, a range of spirits and sparkling apple wine made entirely by La Mare Wine Estate with sustainability at its heart.

The collection celebrates Jersey’s traditional cider apples, transforming local heirloom varieties into refined spirits and sparkling wine that capture the character of the island and the craftsmanship behind every bottle.

The apples are grown and pressed on La Mare Wine Estate in St Mary, certified organic by the Soil Association. Using estate-grown fruit ensures full traceability and minimal food miles. Production follows traditional methods in La Mare’s distillery, including an Alembic Charentais copper pot still, with spirits matured in American and French oak casks. Bottling and labelling also take place on the Estate, maintaining quality while reducing unnecessary transport.

La Mare Wine Estate is carbon neutral, certified by LEAF, and holds accreditations from the Soil Association and Red Tractor. Their work has also been recognised with Gold Awards from Green Tourism and Green Meetings, reflecting sustainable practices that support people, protect the environment, and celebrate local culture.

The Apple Alchemy Collection includes Pomignac VSOP Jersey Apple Brandy, aged five years with balanced flavours and soft oak warmth, Petillant Sparkling Apple Wine, lightly sparkling, bright and refreshing; and Pomelier Apple Aperitif, a blend of La Mare cider and VSOP Apple Brandy, long-aged in oak and winner of the Trophy Award at the International Cider Challenge 2025.

Apple Alchemy brings together craft, heritage, and sustainable innovation. Each bottle tells the story of Jersey’s orchards, La Mare’s expertise, and a shared commitment to responsible production.
